This delicious smoothie is almost like drinking a gazpacho for breakfast. It offers up a generous servings of veggies, and when paired with hard boiled egg, is a great way to start the day or refuel after your walk!! Makes 2 servings.Ingredients1 large tomato, stem and leaves removed¼ medium cucumber¼ bell pepper (green, orange, red, yellow)Small handful of parsley2 tablespoons extra virgin olive oilSqueeze of lemon juiceDash of celery saltSalt and pepper to tastePairing: 1 hard-boiled eggInstructionsBlend first 5 ingredients until smooth; add lemon and salt and pepper to taste.
