Summer Slimmer Challenge: Pina Colada

Happy almost Summer everyone! Today's Summer Slimmer Challenge beverage is a non-alcoholic Pina Colada! This one is so easy, and tastes soooo good! If you pair this with a bit of protein and fiber - say a hard boiled egg and a piece of whole-grain toast - you will have a complete breakfast! I like to keep the sugar lower on this one by using unsweetened pineapple juice and coconut milk, since pineapple is naturally sweet on its own. All you need is:1 1/2 cups pineapple chunks - fresh or frozen1 cup unsweetened pineapple juice1 cup unsweetened coconut milk1/4 cup icePlace the pineapple chunks and ice in the blender - they should go in first so they get the bulk of the pulverizing. Then add the pineapple juice and coconut milk, and puree until smooth. I like to garnish with a fresh pineapple wedge - it's such a festive and delicious drink!Check out the video below and I'll walk you through each step!

So happy you did the challenge and you're still at it to get fit for summer! Yes, and eat healthy and drink healthy. Okay. All you need is some pineapple chunks, some unsweetened coconut milk and some pineapple juice, and a little ice that I've already started with in the blender. Blend it all together, and it's so delicious and good for you … then blend it up here you have a Pina Colada and then garnish it with a little bit of pineapple. It's so good. Love it.
