Let's Celebrate National Rosé Day!

If you needed an excuse to drink a glass of wine today, I got you!! It's National Rosé Day, so let's celebrate! I love to enjoy a good glass of wine occasionally and Rosé is one of my favorites, especially in the warmer months. Pairing rosé is simple... think SUMMER! It goes well with grilled fish or chicken and fresh fruits and veggies. Simple, yet delicious! Here's a recipe from my Denise Austin App that will pair with your Rosé Day perfectly!
Grilled Halibut with Mango Salsa and Black Bean, Corn Salad
Ingredients:
- 2 (6 oz.) halibut fillets (or any firm white fish, such as haddock, catfish, pollock, or grouper)
- 1 Tbsp. olive oil
- 1/4 tsp. black pepper
- 1/8 tsp. salt
- 1/2 cup Mango Salsa (or 1/4 cup store bought salsa)
- 1 cup corn kernels (fresh off the cob or frozen, thawed)
- 1 cup cooked black beans (if using canned, choose no-salt-added or low-sodium beans and rinse and drain well before use)
- 2 Tbsp. lime juice
- 2 Tbsp. chopped fresh cilantro
- 1/2 tsp. chili powder
Instructions:
- Preheat the grill or an indoor grill pan over medium-high heat.
- Rub the halibut with the oil. Sprinkle with the pepper and salt.
- Grill the halibut for 2 to 3 minutes per side, or until the center is opaque.
- Transfer the halibut to 2 plates and top each portion with 1/4 cup Mango Salsa.
- In a medium bowl, combine the corn, beans, lime juice, cilantro, and chili powder. Divide the salad evenly between the 2 plates.
